10 Torr Distilling and Brewing will celebrate their 1st anniversary this Friday, June 8th, with a block party starting at noon and continue through the weekend. Details below…

I had the opportunity to chat with Brew Master Will Whipple and Head Brewer/Distiller Melissa Test to talk about their first year and what the future holds. 10 Torr continues to produce quality beers and distilled spirits. The entire distilling and brewing systems were designed and fabricated locally by Encore DEC (where Whipple works) who have been designing, engineering, building and operating refinery and industrial plants for over 12 years for use around the world. In use, 10 Torr’s web site describes their distilling process best: “the proprietary vacuum distillation process (also known as cold distillation) occurs at extremely low pressure at ambient, room temperature. In traditional distillation, heat is applied which creates chemical reactions that cause unwanted, harsh flavors. 10 Torr Technology distills without added heat thus eliminating these chemical reactions allowing the pure and unique flavors of the spirits to shine through without any chemical harshness. Currently offering a vodka and soon a London-style dry gin with locally-sourced botanicals.”

“We got off to a slow start commissioning our equipment”, said Will Whipple. However, they got it dialed in enough to win a bronze medal at the highly acclaimed San Francisco World Spirits Competition in the Vodka category this past April. “At this point we are exactly where we should be”, said Melissa Test. “We have already brewed more beer this year than we did in 2017.”, she continued.

New canning line

Running both a distillery and a brewery definitely carries additional challenges and 10 Torr continues to grow. They went through a re-branding early on but are now hitting a stride with new products and expanding offerings. A canning line was added last November.

Expansion also includes a new facility in Stead where they will have storage, a cold room and barrel room. “We are looking forward to growing regionally” said Test. Distribution is initially planned to move west to Sacramento, the Bay area and southern CA.

New products include a coffee liqueur, larger 1.75 liter spirit offerings and ready to drink canned cocktails. They are also working on more one-off canned beer releases. “We are at a point where I want to go weird with it”, says Test as 10 Torr is also eyeing additional distillery releases including a Nevada inspired gin and possibly a rum and a beer schnaps.

Tap room hours recently moved to 7 days a week and a new cabaret license will welcome more live music.

The anniversary celebration scheduled for June 8th is being described as a block party and will take place at the taproom, outdoor space and parking lot. The fun starts at noon.

Beer releases include Belgian Wit and a Berliner Weisse. Plus the release of the 3 new canned cocktails.
